Michael+%26+Mike Day 320: Turkey Dinner and Skinny Gingerbread Men Turkey dinner again – same as Wednesday night, but this time we got a BABYSITTER and Mike came. And his cup had the sticker underneath, meaning he was the one from our table of ten who was paraded back to the kitchen, dressed up like a character from Ratatouille (W was very impressed with his hat) and had to serve us all our turkey. He did a pretty fine job, and even re-donned his hat at dessert time to serve us cinnamon ice cream out of a big ice bowl. Earlier in the afternoon we had our requisite hot chocolates, and I remembered some gingerbread men we brought from home – low fat.

So here are some skinny gingerbread men to go with your skinny latte.

Skinny Gingerbread Men

During the holidays, everyone needs a recipe for gingerbread people. Of course the dough also makes great stars, trees, and snowmen, and is worth the effort just for the way they make your house smell.

1/4 cup butter, softened
1/2 cup packed brown sugar
3/4 cup dark molasses
1/3 cup cold water
3 1/2 cups all-purpose flour, or half all-purpose, half whole wheat
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp. allspice
1/2 tsp. salt
1/4 tsp. ground cloves

In a large bowl, beat butter, brown sugar, molasses and water with an electric mixer or by hand until smooth. In another large bowl, stir together the flour, baking soda, cinnamon, ginger, allspice, salt and cloves.

Add the flour mixture to the molasses mixture, stirring by hand just until you have a soft dough. Divide the dough in half, shape each piece into a disc, wrap in plastic and refrigerate for 2 hours or up to a few days.

When you’re ready to bake, preheat the oven to 350°F.

On a lightly floured surface or between two pieces of waxed or parchment paper, roll one piece of dough out about 1/8” thick. Cut out with cookie cutters and place about an inch apart on a cookie sheet that has been sprayed with nonstick spray.

Bake for 12–15 minutes, until set. Bake a few minutes longer for crispier cookies. Transfer to a wire rack to cool. Repeat with remaining dough, rerolling scraps once to get as many cookies as possible. Makes 3 dozen cookies.

Per Cookie: 85 calories, 1.4 g fat (0.8 g saturated fat, 0.4 g monounsaturated fat, 0.1 g polyunsaturated fat), 16.9 g carbohydrates, 3.5 mg cholesterol, 1.3 g protein, 0.4 g fiber. 15% calories from fat.
