Never have we received so many compliments on a cake before. So much so that I think this may become THE cake to make!! We did actually substitute almond extract for the coconut extract because none of the FOUR grocery stores we went to carried it. (We're still shocked by this).We also didn't add the canola oil- but the cake was so dense/moist that it wouldn't have been necessary.
