Peanut Butter & Banana French Toast
Unhappy guts today, all of us. Let’s just say the bathroom has been a high traffic area.
Which made everyone a little wary of dinner, but hungry nonetheless. So I took a chunk of stale baguette and made little peanut butter and banana sandwiches to turn into French toast. The easiest way to stuff bread before French toasting it is to slice it thinly (if the bread is too thick it takes forever to heat completely through to the filling in the middle) and not slice all the way through the bottom crust on every second cut. So you have these little pockets that open up like books, and don’t come apart when you try to flip them in the pan.
For the egg dip – about equal parts egg and milk (I generally use more milk, but not while our stomachs are collectively swearing at us) – let the sandwiches go for a swim – you want more than just a dip, so that the bread has a chance to soak up some of the egg and milk – and cook in a hot skillet with a little canola oil until they are golden and crisp on both sides, and heated through.
PB & banana French toast is great with maple syrup.

To Dana: Have you (or rather, has Martin) ever tried soynut butter? I’m allergic to peanuts too, and I only discovered soynut butter this year. It’s totally a reasonable facsimile of PB, and now I know the joy of PB&B sandwiches (not to mention all sorts of cookies). I’d never heard of PB&B french toast, though! That’s one to add to my repertoire. Mmm.

I don’t think it was something we all ate – I started getting it yesterday afternoon and the boys were fine until today – and W didn’t eat any of the same stuff we did yesterday! Must be a bit of a bug.

perfect combination.
another really good peanut butter substitute btw, is Barney Butter. it’s made with almonds, which is why i bought it, but was completely caught off guard when i discovered that it’s much more like peanut butter than like most almond butter!

I think there is a bug going around. My little guy has been sick to his stomach and I know there are some others around Calgary with the same problem.

I was away on the weekend and we had something similar for breaky on Saturday except the baguette (sliced the same way) was filled with brie cheese… YUM! But I’m gonna try the PB & Ban for the kids.

Clever french toast idea! It combines the kids’ favourite breakfast with their favourite lunch!
That is a 24 hour stomach bug flowing around Calgary. Both my kids have had it and it is in their school. Let’s just say that the kindergarten carpet has suffered greatly…

….and the bug has travelled to Edmonton too! My daughter has been home all week and last nite it all peaked-we were up all nite…yaaaawwwwwwwwnnn.
Hope it is all gone by the weekend as we are participating in the MS 150 bike tour from Nisku to Camrose. Not the time you want to be hit with a stomach bug!
