Digestive Cookie S’mores
I’ve been part of a wife swap this week. As I may have mentioned in the past, my sister is a single mum of three and works (more than) full time as a teacher. These past two days she’s had more on her plate than usual, so I’ve gone over to play spouse, to be another grown-up to bounce things off of (luckily I’m very bouncy), to help with barfing kids and homework and laundry.
As a bonus, W and I have been fed dinner for two days straight – turkey meatballs with mashed potatoes, gravy and cranberry sauce today and stuffed chicken yesterday – both prepped at the end of summer vacation and stashed in the freezer. (Each August she puts away enough to not worry about dinner until Christmas vacation. She’s the Organized One. But I suppose she has to be.) I’ll tell you about the turkey meatballs sometime – I have some in my freezer, too.
But this afternoon when the crème brûlée withdrawl hit and I started fantasizing while sitting at my computer that if I turned into a chocolate Easter bunny I could chew off my own arm, I snuck downstairs and made two s’mores in the toaster oven.
Who needs a campfire, anyway? For that matter, who needs graham crackers? I wouldn’t serve them up with a pot of tea – it’s like good bread; if I’m going to eat a sticky chocolate marshmallow sandwich, it ought to be between cookies I actually like.
To make s’mores inside, put as many cookies as you want onto a cookie sheet, and top each with a large marshmallow (or two). Put them under the broiler for a few minutes, until dark golden and crispy on top, then take them out, top each with a thin square of chocolate (Lindt 70% cocoa works great) and top with another cookie; the chocolate will melt with the heat of the marshmallow. Yum.

If you like digestive biscuits, the ones that are chocolate on one side are great for making s’mores too, especially when you don’t have any chocolate handy (like you ate it all the night before). We take them camping and they are a lot less messy for little hands. Since they come in milk or dark chocolate you can pick the one you like best. I personally prefer dark chocolate but my daughter likes milk chocolate so we usually have a box of each.
They are also good dipped into hot chocolate around the campfire.

How fun!!!! I do this a lot stovetop with other crackers but never thought about the oven! Love the idea of using the digestive biscuits too. MMMM now I want smores!

Oh, I haven’t made smores for years, since Girl Guide camp. I am going to have to remedy that and soon.
What about using the caramel on one side, chocolate on the other side digestive cookes. Yum!

What are digestive cookies? Doesn’t sound appealing, but obviously they are very tasty, from the comments! I’m guessing we don’t have those in USA. Do you know if we have something similar?

I have to admit I have done this with my kitchen torch. I know, I know, it should only be used for creme brulees etc but I couldn’t resist. This is what you get for loving to cook and bake and having a mother in law how likes to buy stuff – really cool gadgets I would never buy for myself. I am totally having smores when it’s not plus a billion outside again!

Julie I never really considered a digestive cookie as a vehicle for smores… but it makes sense, probably balances the sweetness of the marshmallow. My one W-S splurge every holiday is their marshmallows (not near as sweet as jet puffed) I can see doing smores with them, mcvities and some dark chocolate. Or maybe some pizzelles? Make bigger smores. Hmmm this could get dangerous

Digestive ‘smores really are amazing.
This summer I tried using the Digestive cookies with the chocolate bottoms. It isn’t dark chocolate, but it is just the right amount!

Julie, that photo is the most beautiful thing I’ve seen all day. S’mores get me in every nostalgic corner of my heart. Yum.

But the real reason I’m writing this comment–THERE ARE DIGESTIVE BISCUITS IN CANADA??? You mean I don’t have to fly all the way from Baltimore, MD to London to get them? After several trips to the UK over the past 5 years, I’ve become addicted, so now when I go every year, I bring back a whole suitcase of digestives. Canada is a lot closer than the UK!
