I’m back. We survived re-entry into the real world, sustained on the drive by some sugar cookies wrapped in a napkin. (It wasn’t difficult, post-brunch buffet.) I just know I’m going to wake up tomorrow morning starving and Jonesing for eggs Benny. And who’s going to make my bed?

I did manage to catch a bit of Chef Patrick Turcot’s session while I was there – he’s the wonderful, friendly executive chef of the Fairmont Jasper Park Lodge, and he always does something maple-y, being French Canadian and all.

He made a Maple Syrup Pie. I haven’t told Mike this – I might be able to get away with making one and wrapping it up to tuck under the tree, and forego shopping altogether.

So here you go. Look how easy it is! It’s no more complicated than making packaged pudding on the stovetop. Eat it in small slices, or make tarts – they might be a nice alternative to butter tarts this Christmas. Although is anything ever a better choice than butter tarts? It’s best to not compare – I’m so making these and scoring bonus maple points with Mike.

Classic Maple Syrup Pie

If you want to call this a tart, like Patrick did, make your pastry shell in a tart pan with a removeable bottom – it looks extra-elegant this way.

1 1/2 cups pure maple syrup
1 cup whipping cream
1/4 cup cornstarch
1/4 cup cold water

1 9” prebaked pie shell

Whisk together the syrup and cream in a medium saucepan set over medium-high heat. In a small dish, whisk together the cornstarch and water; add it to the maple syrup mixture and bring it to a boil. Cook for 2 minutes, stirring, until thickened. Pour into the pie shell and let it cool until set. Serves 8.

    OoOoh looks good – as a kid my parents would buy mape-o-spread. I loved the stuff. This looks like the grownup version, although I think I’ll make tartlets. Thanks Julie :)

    That sounds very easy, and hopefully delicious. My daughter and I love pure maple syrup, our family being divided into two “camps” where syrup is concerned. Could we sneak any fresh walnuts into this somewhere? Maybe just a garnish? Can’t wait to try it…

    Margo – walnuts would be brilliant! I’d toast them, put them into the shell and pour the filling overtop. Or use them as garnish – if you did tarts, you could set one walnut half on top of each! great idea!

    Hey Julie, did you ever try my maple pie recipe I had sent you via email? I make it in the microwave and had asked you to convert it for stove top method?

    Yum the pie was soo good. I will make it when there is going to be a lot of people here to eat it, I know I could probably eat the whole thing myself not a good thing. Jasper was special it always is such a nice getaway before christmas. It was great to see you again Julie and w is so cute. Loved the pictures of him cooking and by the lake. Alas yes back to reality today, nobody to wait on me sigh.

    Manon – no, not graham crumbs – the chef sprinkled maple sugar over the top, although it was just to make it look pretty – it’s not necessary.

    Sorry, I do remember you sending the recipe but now can’t find it. Can you resend? Are you sending me more syrup too?

    Maple syrup pie.
    I make “brown sugar pie” (Heather’s fave), but I’d never thought of Maple Syrup pie. Manon, I was lucky enough to win, last year, a bottle of your syrup on FSF. And, well… I’ve got it in my cold room on a shelf, waiting for the right moment. It’s too special to use; i’ve been using the stuff (still real maple syrup) I buy at the Co-op. This pie looks like the reason to actually open it.
    My girls will be thrilled.
    Oh, and Julie? I love your idea of pie for Mike’s Christmas present. I’m thinkin’ my hubby would like that too… I’ll make a card, though, redeemable for one pie of his choice. Too many other wonderful things to eat that day! (And while our little dog is very well behaved, a pie under the tree would be TOO MUCH for her to resist!)

    That pie looks wonderful – but I’m sure it is not diabetic friendly. But the recipe looks so easy – maybe a one inch sliver would be OK. I usually hoard my maple syrup to have a little bit on pancakes or waffles.

    hi Julie, My brother Carl (Carmen’s husband) is coming to the Island next week and butter tarts are his treat of choice – I try to make them when I know he is coming, but this time, I think maple tarts are in order. I give a very good friend of mine maple syrup fudge for Christmas every year, so I can sure relate to you giving Mike a maple syrup pie. Oh, and welcome home!
