It’s a Very Good Thing when your 20 year old nephew comes along to Tofino, having recently decided he likes to cook. He made us browned butter brownies one stormy night, and we ate them around the fire. Browning butter was a bit of a revelation – he hadn’t heard of it before – and although the taste doesn’t come through very well in the finished brownie, it does turn out dense, fudgy and chewy – every good quality I look for in a brownie. If you’re rushed, just melt the butter – but I do like the idea that there’s browned butter in here. I think next time I’ll give browned butter blondies a whirl.

    As soon as I saw this recipe I knew this was the one for brownies I have always been searching for… I immediately made a batch… and I was right!! Mmmmmmmm…just how a brownie should be – gooeyish in the middle and firmish around the edges. I did add a generous handful of large walnuts, as you would have, (which I quickly toasted first) then served warm with 2 big scoops of French Vanilla icecream melting on top…heaven on earth!!! Thanks again for another wonderful addition to my collection of winners :-)
    P.S. My husband curses both of us since he is trying to lose a few inches of girth.

    I think you’re right, the flavour of the browned butter would come through better in a blondie. Now I want to bake! I do need snacks for tomorrow… better get crackin’

    Love these, but also have a weakness for blondies, how would you tweak the recipe, or do I need to ask the nephew?? Don’t you just love guys who can cook!!

    This recipe is why I bought that issue of Bon Appetit. They’re amazing. It’s worth it to brown the butter! MMMMMM
