Gluten-free Buttermilk Pancakes and Oatmeal & Quinoa Blueberry Muffins
My nephew, Hugo, can’t eat gluten. And so I made these pancakes and oatmeal and quinoa blueberry muffins for a recent playdate, and they went over very well with all the kids, and the grownups.
I thought you might like to know that I posted the pancake and muffin recipes over at the Family Kitchen. I’ve had good feedback on them, so thought I’d pass it on.
(Note: if you can’t have any trace of gluten, ensure you use gluten-free oats.)

Ours were runny, had a hard time folding up the sides and when they hit oven they flattened out
HELP…Please? Would love to be able to make these for friends.

Hi Karen, Here’s something I learned (the hard way): make sure you freeze the little pies before you put them in the oven. I had one batch in the fridge and one batch in the freezer and the ones in the fridge flattened out and made a sticky mess, but the ones in the freezer were great!

Those pancakes look divine! I’m not really supposed to eat wheat, so these are perfect! Definitely next on my list for a sweet breakfast treat
